Recipe: Pacific Northwest Kiwi Crisp

Summary: A great fruit dessert.

  • 5 cup peeled and quartered kiwi
  • 1 tablespoon sugar
  • 2 tablespoon all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup packed brown sugar
  • 1/4 cup whole wheat flour
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg (about an 1/8 tsp if fresh ground)
  • 1/4 teaspoon ginger
  • 1/4 cup butter
  • 1/4 cup chopped nuts (almonds or hazelnuts are recommended)

I find that this recipe works well with kiwi that is picked early, well before ripening, maintaining tartness. Any multiple whole grain cereal like muesli – if it has very little dried fruit in it – will work. If the cereal has a sufficient ratio of nuts then increase to ¾ cups and eliminate nuts as an additional ingredient.

Filling – Combine the 1 tblsp sugar with the all-purpose flour and add kiwi, toss well. Place in an 8 x 1 ½ – inch round baking dish; a quiche pan works well.

Topping – Combine oats, brown sugar, flour, and spices. Cut butter in with a pastry blender until mixture is crumbly. Stir in nuts. Sprinkle topping over filling.

Bake in 375 degree oven for 30 to 35 minutes until fruit is tender and topping is browned.
