Recipe: Pumpkin Sauce
Summary: Delicious sauce for pasta or gnocchi.
~ 1 ½ – 1 ¾ cup pumpkin (just so it’s not too moist. You can do this by cooking it a day ahead, placing it in cheesecloth and suspending it over a bowl in the refrigerator overnight.) cooked, pureed & drained 1 tablespoon Honey 1 cup milk
- Slowly heat pumpkin, honey & spices. Slowly add milk, stirring constantly. Put in as little or as much milk as will bring sauce to a consistency you prefer.
- Garnish: Parmesan or asiago cheese, grated. Some bright red or green vegies like green onions, curls of pepper or pimento.
This was made to go with Patty’s gnocchi, but would probably be good with pasta or even risotta.
