Recipe: Gnocchi with Pumpkin Sauce

Summary: Tasty Italian style dish.

  1. Boil yam and potato with a pinch of salt, then mash and cool.
  2. Put six cups or so of water in a good-sized pot and set on stove burner.
  3. Liberally sprinkle pastry board with flour and put mashed stuff on it. Sprinkle stuff with more flour. Make a well in center and break egg into it. Put more flour on it and mix. (Turn heat on high under water). Add flour as necessary and continue mixing and kneading until dough is smooth and no longer sticks to fingers. Divide into pieces and, on floured surface, roll into ropes about as thick as your little finger. Cut into 1” pieces. Do not stack. Place into salted boiling water in batches, removing pieces with a slotted spoon as they rise to the surface. Layer pieces in serving dish with sauce.
