Recipe: Green Tomato and Apple Chutney

Summary: A great Indian style chutney

Ingredients

  • 3 pound Green Tomatoes (9 to 12 medium)
  • 2 pound Tart Apples (4 to 5)
  • 2 cup Raisins (dark or golden)
  • 1 1/2 cup Onion diced
  • 2 teaspoon Garlic minced
  • 1 teaspoon Chile hot red, minced
  • 3 – 4 tablespoon Ginger minced
  • 2 cup Brown sugar lightly packed
  • 1 cup Sugar
  • 2 teaspoon Sea Salt or pickling or noniodized
  • 1 1/2 cup Cider vinegar
  • 1 1/2 tablespoon Mustard seed
  • 2 teaspoon Coriander ground
  • 1 teaspoon Cinnamon ground

Instructions

  1. Cut out the stem scars and blemishes from tomatoes, cut into 1/2-inch chunks. Place in large pot.
  2. Peel, and cut apples into 1/2-inch chunks; add to tomatoes. Add raisins, onion, garlic, sugars, salt and vinegar. Mix, bring to boil over medium-high heat. Reduce heat and boil the mixture slowly, uncovered, stirring often, for 30 minutes.
  3. Prepare 4 pint or 8 half-pint jars and lids for canning.
  4. Add ginger, mustard, coriander, cinnamon and chili to pot. Return to boil, adjust heat, and continue to cook uncovered at slow boil, stirring often, until it holds a mounded shape when lifted in a spoon. Taste for balance of flavors which will improve with age.
  5. Ladle into jars, one at a time, leaving 1/4-inch head space. Wipe jar rim with clean, damp cloth. Attach lid. Process in a boiling water canner for 10 minutes.

Recipe: Pumpkin Sauce

Summary: Delicious sauce for pasta or gnocchi.

Ingredients

  • ~ 1 ½ – 1 ¾ cup pumpkin (just so it’s not too moist. You can do this by cooking it a day ahead, placing it in cheesecloth and suspending it over a bowl in the refrigerator overnight.) cooked, pureed & drained
  • 1 tablespoon Honey
  • 1 cup milk

Instructions

  1. Slowly heat pumpkin, honey & spices. Slowly add milk, stirring constantly. Put in as little or as much milk as will bring sauce to a consistency you prefer.
  2. Garnish: Parmesan or asiago cheese, grated. Some bright red or green vegies like green onions, curls of pepper or pimento.

This was made to go with Patty’s gnocchi, but would probably be good with pasta or even risotta.

Recipe: Duane’s Peanut Butter Oatmeal Cookies

Summary: One of Duane’s most requested–yum.

Ingredients

  • 1/2 cup butter you’re insane to use margarine
  • 1/2 cup Peanutbutter fresh ground chunky
  • 3/4 cup brown sugar
  • 1 egg slightly beaten
  • 1 T vanilla
  • 3/4 cup whole wheat flour
  • 3/4 teaspoon baking powder
  • 1/2 cup wheat germ
  • 1 1/2 cup rolled oats
  • 1/2 cup raisins thompson organic

Instructions

  1. 375o for 10 – 12 minutes. Makes about 16 large cookies

Recipe: Curried Sweet Potato Pancakes

Summary: Can’t remember where we picked this recipe up, but it has stuck with us.

Ingredients

  • 1 pound Sweet Potatoes peeled
  • 1/2 cup Flour
  • 1/2 medium Onion chopped
  • 1 clove Garlic chopped fine
  • 2 teaspoon Sugar
  • 1 teaspoon Brown sugar
  • 1 teaspoon Baking Powder
  • 1/4 teaspoon Cayenne Pepper
  • 2 teaspoon Curry Powder
  • 1 teaspoon Cumin ground
  • Salt pepper to taste
  • 2 Eggs beaten
  • ~½ cup Milk
  • Peanut oil
  • Ghee (optional)

Instructions

  1. Coarsely grate sweet potatoes. Sauté onion and garlic in oil or ghee and mix with potatoes. In separate bowl, blend flour, sugars, baking powder and spices. Add eggs and milk to make a stiff batter. Add potato mixture and mix. Batter should be moist but not runny. Add more milk if necessary.
  2. Heat oil in frying pan until it is barely smoking. Drop batter by tablespoons and flatten with spatula. Fry over medium-high heat several minutes on each side until golden. Drain on paper towels and serve.

Recipe: Cajun Catfish with Dirty Rice

Summary: This is a southern Cajun dish the way we like it around our house.

Ingredients

  • 1 pound fresh catfish fillets
  • 1/2 cup canola or corn oil
  • 1 teaspoon ground thyme
  • 1 teaspoon ground black pepper
  • 1/2 teaspoon cayenne pepper or chipotle powder
  • 3 clove garlic crushed
  • 1 cup white rice uncooked
  • 2 cup vegetable broth

Instructions

  1. Here’s the rub: add thyme, black pepper, chile, and garlic to 1/4 cup of the oil.
  2. Rub this mixture into the catfish an hour or so before frying. Start cooking your rice in the veggie broth. Heat your skillet for the catfish to medium. Put in the rest of the oil and the rubbed fillets and cook on both sides until done. Fish should be flaky and come apart easily with a fork.
  3. Pour the drippings over your cooked rice and stir in. Serve together with a salad and cornbread. Yum.
