Recipe: Curried Sweet Potato Pancakes

1 pound Sweet Potatoes peeled 1/2 cup Flour 1/2 medium Onion chopped 1 clove Garlic chopped fine 2 teaspoon Sugar 1 teaspoon Brown sugar 1 teaspoon Baking Powder 1/4 teaspoon Cayenne Pepper 2 teaspoon Curry Powder 1 teaspoon Cumin ground Salt pepper to taste 2 Eggs beaten ~½ cup Milk Peanut oil Ghee (optional)
- Coarsely grate sweet potatoes. Sauté onion and garlic in oil or ghee and mix with potatoes. In separate bowl, blend flour, sugars, baking powder and spices. Add eggs and milk to make a stiff batter. Add potato mixture and mix. Batter should be moist but not runny. Add more milk if necessary.
- Heat oil in frying pan until it is barely smoking. Drop batter by tablespoons and flatten with spatula. Fry over medium-high heat several minutes on each side until golden. Drain on paper towels and serve.
