Recipe: Black Bean Soup

Summary: This is one of my favorite, easy to make soups.

Ingredients

  • 1 1/2 cup carrots sliced
  • 1 medium onion yellow
  • 3 – 6 medium cloves garlic
  • 2 1/2 cup dried tomato chopped or a handful
  • 3 jalepeno chiles
  • 1 or more bell pepper (using different colors makes the soup more visually interesting)
  • 1 cup zucchini
  • 2 tablespoon mexican chocolate
  • 1 tablespoon cumin ground
  • 1/2 teaspoon coriander ground
  • 2 bay leaves
  • 2 teaspoon oregano
  • 1 teaspoon basil
  • 3 cup black beans cooked
