Recipe: Black Bean Soup
Summary: This is one of my favorite, easy to make soups.
1 1/2 cup carrots sliced 1 medium onion yellow 3 – 6 medium cloves garlic 2 1/2 cup dried tomato chopped or a handful 3 jalepeno chiles 1 or more bell pepper (using different colors makes the soup more visually interesting) 1 cup zucchini 2 tablespoon mexican chocolate 1 tablespoon cumin ground 1/2 teaspoon coriander ground 2 bay leaves 2 teaspoon oregano 1 teaspoon basil 3 cup black beans cooked
